Please share any home-made recipes for this delightful dip.
Mine is as follows:
4 lg avocados 2 cloves garlic (minced) 3/4 cup white onion (finely chopped) 1 medium/lrg tomato 1/4 cup cilantro (finely chopped) 1 jalapeno chile 1 small lemon 1 small lime 2 tbsp sour cream salt / pepper
In a bowl, combine garlic, onion, tomato, cilantro. Halve chili pepper and scrape seeds only into above combination, discarding chili shell. Sqeeze juice from both lemon and lime into above ingredients along with 4 - 5 dashes of both salt and pepper. Cover bowl and shake ingredients to mix. This is now a salsa-type base. Refridgerate for 1 - 2 hours.
After salsa is properly chilled, halve each avocado, leaving pit whole in one of each halve. To remove pit, tap large knife with force onto pit, and remove from avocado half. Set pits aside. Carefully peel away skin off each half. In a large bowl, place all 8 halves. With knife, blend avocados by slicing into chunks. DO NOT mash, but rather chunk. Add salsa mix and sour cream, and with fork, blend all ingredients until mixture is chunky and just slightly creamy, but well infused. Set pits on top of guacamole (to prevent dip from browning) and chill 1 - 2 hours.

This first recipe looks promising.
However, I am disturbed by the lack of cumin.
Transmarine, don't take my comment the wrong way because I think this is a kick-ass thread and topic.

By no means will I take ANY guacamole the wrong way! That's why I wanna see other recipes...so we can share and mix and match! I must try a dash of cumin next time!

I am disturbed by the lack of chile. I'm not sure I could even taste one jalapeno mixed with 4 avo's. Guacamole must be HOT. How about some roasted serrano or habanero? |

My take is that you don't want to mess up and make designer guacamole by adding roasted ingredients. But again, this varies by personal taste. If you get a big enough chile, you should get an ample amount of seeds...and if you mash the seeds (like garlic), the oils will be more present, and the heat factor will rise. I personally don't agree with a guacamole that burns your tongue, but rather one that shows a subtle zeal.

A wise substitution, not that there's anything wrong with cilantro.
One of my guac recipes:
2 avos, mushed 1 clove of garlic, minced 2 large tomatoes, chopped Half a lime, squeezed Cumin, lots

I'm not a fan of tomato in the guacamole. To me it's just avocado, lime, onion and chile. But I can't cook so don't take my word for it...
