I implore you Floop to try the sour cream. It isn't a great amount and doesn't alter the color. As for taste, what it does is just add a slightly creamy zing and a nice form. BUT DON'T ADD TOO MUCH OR YOU WILL RUIN IT. Maybe try a little less first and go from there until you are content. Of course, if you don't like sour cream, then disregard this whole suggestion and use marshmallow creme.

you have sold me on the idea of trying it TRANSMARINE. i guess only using a little could work. i can't stand "guacamole" when it's all dilluted and white. just give me the avocados baby

But it doesnt make it white. It's only a couple tablespoons. But I'm anxiously awaiting your experiment. Oh...and the marshmallow creme was just a joke. If you put that stuff in there it will get all sticky and sweet, and it won't mix in well at ALL. That would only be an ingredient if you were making guacamole for alley dogs or weathered crows.

yeah, i understood. i was referring to those other inferior white-ish guacamoles.

I'm against pure sour cream with mexican food, although I really like sour cream chicken enchiladas where the sour cream is mixed up with cheese to make a delicious sauce (at least if done at the right restaurant-can easily be awful).

I like my guacamole more pure-perfectly ripe avocado and lemon juice and salt, and maybe a sprinkle of tomato or tiny slivers of onion mixed in.

Back when I was a kid, a Ninfa's opened here in Texas and was supposed to be "California Mexican food" I think. The only thing I remember was lots of sour cream. Is that true of Mexican food in California as a whole? If so, give me tex-mex or mex-mex.

i don't think so.

it depends on where you go. i think the more "family style" Mexican places generally serve things with more sour cream. but that's the case everywhere. i don't know what 'California Mexican food' would really be anyway. if anything, i'd say maybe more burritos and fish tacos (and sea food in general) are more prevalant here than other places.. you can find anything you want here though

i don't think anyone holds a candle to our burrito-making prowess.

personally i love all Mexican food, but not bland gringo family style stuff (hard shell tacos etc..) though even that can be good.

New Mexico-area cuisine is in a class by itself

I've been to Ninfa's with my parents when I visit Texas and it doesn't strike me as being California Mexican. I don't think sour cream is common at all. When I moved from Texas to San Diego the biggest differences were the burritos, rolled tacos, and tacos (not the Taco Bell hard shell kind, but little tacos with soft corn tortillas, meat, cilantro, and maybe pico de gallo, and maybe guacamole).

I had lived in Texas for 8 years and liked fajitas and other Tex Mex. But, I was in love when I reached San Diego. To this day I haven't found burritos that I love as much as the cheap burritos I had in SD. Packed with carneasada and guacamole. Hot and big with a can of coke. Too fucking good.

We went out for Mexican tonight. Mexican food with accordian and tuba music playing out of the kitchen makes everything alright.

ok...there's a baja fresh 1/2 mile from my work. You just decided my lunch for me (although I always go with the baja steak burrito, not the pictured chicken). By the way, do you guys have an overflow of the burrito fast food restaurants like we do: Q Doba, Chipotle, Freebirds. They are all over, but definitely a welcome addition with their fresh ingredients and tasty choices.
