Tricky one... I'm cooking for a bunch of people on Thursday, one of whom doesn't eat meat (seafood/fish is fine, it's not a principled choice). Having established that it's socially acceptable to cook both a meat dish and a vegetarian dish, I need vegetarian food ideas.
The main course will be a bolognese/meatballs kind of thing (making it to prove a point), so I'm looking for a starter and a vege option to go alongside that.
Any ideas?

just to torture the vegetarians, you should set out your delicious meat selections and then next to it have a bunch of cold tofu cubes on a paper plate |

portabello - so many ways to cook.. I LOVE mushrooms
I like grilled with spinach, feta, pine nut pesto and sauce of roasted red peppers which you buy in the can and puree to make sauce, it looks like marinara but it's red peppers... you put the spinach pesto inbetween the mushrooms (after marinated/balsamic vinegar grilled) like a sandwich and smother in sauce (cooli it's called)... serve it like at entree
that's my simple idea, any questions?

Was going to suggest stuffing a butternut with wild rice, feta, garlic and some rosemary but LBF's suggestion is way yummier and easier. |

Ah well, she doesn't like meat because of the texture/taste, meat substitute ain't really the way to go. None of your soy bean nonsense, neither.

Simon, I can tell yours is an earnest question. I cannot hold you responsible for the level of immaturity exhibited by some of your respondents. So I will answer, as a vegetarian of more than 20 years. While I love Surfer's idea, a stuffed squash is, to my palate, a wintry or autumnal dish. I'd go with LBF's recipe. It sounds good and a bit fancy, so you look like you gave it some thought, which vegetarians appreaciate. You might also have an appetizing that would appeal to both meat-eaters and vegs, say some hummus and carrots. Bon appetit and remember, meat is murder. ; )

Tell me about it. It's still 4 Celcius here. I'm wishing the bluest skies (Ray Davies stylee) to Simon for his dinner party. Oh, what the hell, I'll just be my usual brash self: Simon, can I come? I'll be in charge of the music and I'll bring wine. And I'll make my really dark, really good, really dense chocolate cake, which is as addictive as crack cocaine. I'll also bring Surfer, and the two of us will clean up afterwards.

There are a lot of good pasta dishes, with spinash and mushrooms that are delicious. But you can always try my delicious curry tofu.

Simon, honey, for you I have whipped out The Big Blue Folder of Recipes. Two asparagus to choose from:
Roasted Asparagus Almondine
A bunch of asparagus, trimmed 1 Tablespoon olive oil 1/4 teaspoon salt 1/4 teaspoon black pepper 1/4 cup sliced almonds
Preheat oven to 450. Toss asparagus with oil, salt and pepper on a large pan. Roast on bottom oven rack, strirring a couple of times, until lightly browned. Meanwhile heat a small skillet, add almonds until golden brown. Sprinkle over asparagus.
Fusili with Asparagus (guaranteed to please meat-eaters!)
Enough fusili to serve four 1/4 cup plus 1 Tablespoon olive oil 1 cup chopped onion 1 bunch asparagus, trimmed zest and juice of 1 lemon 1 Tablespoon fresh rosemary 2 teaspoons minced garlic 1/2 teaspoon salt 1/2 teaspoon garlic 1 pound (16 ounces) cannellini beans (white beans) drained and rinsed 1/2 cup freshly grated Parmesan cheese
Boil pasta.
Meanwhile, heat olive oil, add onion, saute until translucent. Add asparagus, saute until almost tender (3 minutes?). Stir in lemon zest, rosemary, garlic, salt and pepper. Stir in beans. Gently heat mixture.
Cook pasta until al dente. Scoop out 3/4 cup cooking water and set aside for later use.
Drain pasta, return to pot, add 1 tablespoon olive oil, toss.
Pour bean mixture over pasta. Add reserved 3/4 c. water plus lemon juice. Mix.
You can serve with breadsticks since you don't fear carb bombs.

A little spagghetti is always nice, or pasta primavera. But in this case I would go for a salad. And when I say salad, I'm not talking about a little whimpy iceberg and roma tomato salad with ranch dressing on top. A good salad should consist of the following: good, fresh, NOT ROTTING, mixed greens, shredded carrots, shredded apple, shredded cucumber, shredded zucchini, perhaps also some shredded turnips or beets, sliced radishes, sliced asparagus, broccoli and/or cauliflower chopped into tiny fragments, sliced mushrooms, a good variety of nuts and seeds, such as pumpkin, sunflower, ground sesame or flax seeds, almonds, pecans, cashews, etc. (only 2 or 3 of these will be plenty). Garnish it with sliced tomato arranged in a circle around the salad with red onion rings and/or bell pepper rings in the center. You might also include some fresh herbs added for both decoration and taste. This should be very simple to make and very palatable, especially to a vegetarian (or pescetarian in her case). Of course, be sure to include decent salad dressings. If you don't have time (or a good recipe, which I can provide if you're interested) to make your own, Paul Newman dressing is probably the best thing you can get at the grocery store. Experement with presentation. Sometimes I like to vigorously toss my salads, but it can be nice to layer salads too.

I make this - it makes for a good starter and doesn't take too long to prepare. Make up your own name for it as i can't remember it's official name (i personally think 'Scarla O'live & Feta Delight' is a perfectly sensible name )
1. Roll pastry into rectangular-ish shape (approx 22cm x 12cm) Roll as thin as possible though not so thin that it will break when you move it Turn edges over to form a 1cm lip
2. coat said pastry with a thin layer of green pesto
3. Add layer of spinach (not too much but enough to cover the base)
4. Crumble feta cheese over the top (you don't want to be seeing too much spinach underneath)
5. Add green olives - enough so that every slice will get you an olive
6. Cook in the oven until pastry is ready (it's going to expand so give it enough space to grow)
7. Eat

In defense of my asparagus pasta, Homers, it's both delicious and quick to make. You can boil water, can't you? That's pretty much all it entails.
Also, about your attitude toward vegetarians - we are people, too!

I did the shopping tonight and actually didn't go with any of your recipes... I went with Tre's goat's cheese idea. Thanks all though, it's more my cowardice preventing me from trying these things on other people...
