simple, good quesadilla:

two tortillas
monterey jack cheese
sliced jalapenos
diced white onion
chopped cilantro
thinly sliced avocado
fresh lime wedges
hot sauce (preferably Cholula.. there are many others. Tobasco will do)


- coat frying pan with olive oil, bring to medium heat
- throw in tortilla and add sliced (or grated) cheese, jalapenos, onions, cilantro
- cook till cheese is melted
- cover with 2nd tortilla and flip
- cook until 2nd side is nicely crispy (add more olive oil if necessary)

remove from pan and slice into 8ths with pizza cuttter
garnish with sliced avocado, lime and hot sauce
enjoy

More Simple and Delicious Quesadillas

Chicken Breast cut into strips and sauteed
Tortilla (plain, garlic and herb, sun dried tomato etc.)with cheese (cheddar, gruyere, mozzeralla, provolone, swiss... depends on what you have and what you like)
Diced Scallions, Tomatoes

serve with salsa, sour cream on a bed of lettuce and garnished with scallions and tomatoes..
