Not to sound paranoid, NimrodsSon, but how do I know you're
not one of Them? I post my trademarked tofu recipe for all to
see and then the mocking begins. How do I know you won't be
the first to make tofu jokes once I post it? Oh and Rita, Miss
Pork-ugal, you've had your fill of meat and now you come
back to the goodness of tofu!

What! Why would you ever suspect that!? I need a good tofu recipe, seeing as I've got to use up a pound of tofu before it expires and I can't decide how I'm going to cook it. I've also got two packages of tempeh (like tofu, but from fermented soybeans), which I've never tried before, so I could use some good tempeh recipes (not requiring a grill, as mine's broken) if anyone has any.

While we're on the subject of tufu, do you tofu eaters freeze yours and then thaw it, so that all the moisture can be removed, or do you prefer it soft and moist? As for me, I usually freeze it, as I like prefer that texture, but of course, when making a good tofu scrambler (which I've got the best recipe for ever, by the way, and I'll post it if Kathryn posts her "Spicy Ginger Tofu") or tofu lasagna you have to have it moist.

You're on!

First, to answer your question. I never freeze tofu. If I need
it to be firm, I remove the water by placing a pound cube
on a flat surface then putting on top of it a heavy plate, which
gently pushes down the moisture after about 10 minutes or so,
while I make my marinade.

Lastly, the recipe for "Kathryn's Patented Spicy Ginger Tofu Guaranteed To Please Even MCA™"

Cut a pound of tofu into half-inch cubes. Pour marinade.
Bake until gooey (350 degrees for 30 mins?). Marinade:

Mix
1/4 cup soy/tamari sauce
1/4 cup mirin (rice wine - expensive but worth it)
1/4 cup brown rice vinegar
2 Tablespoons honey
2 Tablespoons (or more if you like your ginger) minced fresh ginger
2 Tablespoons toasted sesame oil (I use hot for
the "spicy" part but regular sesame oil's good too)
1 Tablespoon minced fresh garlic

All right, I might give it a try tonight if I have time. Do you think extra light olive oil will work in place of sesame oil? And do you have to be 21 to buy mirin?

Here's my tofu scrambler recipe, as promised:

In a medium sized pot:
-one 15 oz. can of diced tomatoes
-1/2 of a Large yellow onion, diced
-one large red bell pepper, diced
-1/2 of a 4 oz. can of jalepeńo peppers (or a couple of fresh ones)
-2-3 cloves of garlic

Bring the above to a boil and then simmer for 10-15 minutes, then add dried cilantro and cumin to taste

Meanwhile, in a skillet, crumble 1 pound of firm tofu in 2 tablespoons of oil, 1/4 cup rice milk, and 1 package of tofu scrambler mix (available at health food stores and most grocery stores). Fry for 3-5 minutes.

Serve the scrambled tofu with the tomato sauce in flour tortillas.

With the help of Kathryn, that without it you wouldn't understand it, here it is!

Rita's Super-Duper Curry

1 pound of tofu, cubed
1 can of coconut milk
1 cup cow milk (or can use soy milk!)
1 handful of shredded coconut
4 cups of cut up veggies - broccoli, eggplant, carrots -- whatever you like
1 onion
2 Tablespoons olive oil
1 teaspoon curry (mild, medium, hot depending on your taste)
1 chili pepper
1 teaspoon soy sauce

Cut and salt veggies. Set aside.

Heat cow milk. Add shredded coconut, bring to a boil. Set aside.

Slice onion, fry in half of the olive oil until tender. Add coconut milk and
shredded coconut/milk mixture. Add the veggies, chili and curry powder.

In a separate pan, heat up the second tablespoon of olive oil and fry the
tofu. Add soy sauce.

Add tofu to your other pan. Serve with basmati rice. Enjoy!

I have no objection to vegetarian food in general, and would definitely try that recipe with chickpeas or something instead (very interesting with the milk...), but I find no redeeming features in tofu at all, that would make me want to eat it again.
