these food threads are making me hungry. i'm going to be leaving shorty to enjoy some sushi myself. are there any other sushi fiends out there? it seems like the kind of thing you're either into or you're not.
i could eat it almost every meal. almost. i could eat Mexican every meal

One of the marvels of the modern world is that I can get sushi that's just as fresh as floop can, and I live 1,000 miles inland -- they fly it in every day. We have plenty of great sushi joints in Denver. And there seem to be tons of these "Asian grills" going up all over the place, many of which do sushi. We've got a new one a couple blocks from my house that's great.

I'm a sushi fanatic. Very picky about it though. Favorite place has impeccable sushi, but the lead sushi chef/owner spends all night at the yakitori grille which is perched on one end of the sushi bar. His grilled items, especially delicious vegetables wrapped in bacon and basted with some sauce and spices are so amazing. Enoki mushrooms, rich and buttery, are one of my favorites. Their sushi, too, is such a perfect temperature. Many places serve it ice cold, but Teppo usually serves the sushi somehow at a slightly warmer temperature which makes the flavor and the texture burst a bit. Uni (sea urchin) is my favorite. What do you like the best?

kathryn - last night: grilled shishito peppers and miso soup to start. toro, salmon, yellowtail and albacore sushi. spicy tuna roll. shrimp tempura roll. baked yellowtail collar. multiple large Asahi's.


superabounder - i hate to say it but uni is my least favorite thing. most people i know love it but it's not for me. i usually like getting most of the traditional classic stuff (see above) but i like most everything if it's good (except uni - and i'm not crazy about sweet shrimp). i think if the sushi is ice cold it's probably been frozen and very recently thawed out, which is not ideal


hammerhands - any way you could summarize the gyst of that podcast? i don't think i can stay focused for 26 minutes. if it's about how we're ruining the oceans and depleting all the fish.. i know, and i know i'm a bad person. but i have a weak spot for sushi

I've actually never eaten sushi either. Had a personal fave, chicken in lemon sauce with boiled rice tonight, but it wasn't very nice. In fact, there was a hair in it. And they gave me Coke instead of 7UP. Won't be ordering from there again!

If you start at 8:30 of the podcast, it's pretty interesting.

First they establish that sushi comes from all over the world, then they talk about how it was originally sold in a way similar to hotdog vendors.

Fatty fish like tuna were not popular until after the second world war, the American influence of fatty red meat as a delicacy changed opinions in Japan. The less lean cuts of tuna were previously used for cat food.

In the 60's, with the advent of on-ship refrigeration, more exotic fish was introduced to the Japanese market.

At 8:30 they talk about "The day of the flying fish". In the mid 70's, because Japan Air Lines had cargo room and they had nothing to ship back to Japan, someone told some Nova Scotians that they could get a lot of money for Blue Fin Tuna if they could ship it to JFK. That started an industry, there are even Tuna Cowboys in Australia.

Then they talk about presence of sushi as being an indicator of an economy's integration into the world and the confidence that must exist in the local regulators for people to eat raw fish, and they contrast the general view of globalisation as McDonald's and KFC with the small business and personal relationships that exist within the sushi fishing industry.

They do not talk about the depletion of tuna stock, however there are other articles on the CBC website about that.

just kidding. now i'm curious to listen to it.

there was a good story about the history of sushi in some magazine recently (Vanity Fair maybe?).. it is interesting how much it's changed from what it used to be. and it's interesting that no one used to eat blue fin tuna and now those fish sell for like $250,000 and more each

floop, i'm jealous. i'm also worried about carl. first, he's never had real ramen, then he's never had sushi. i propose a "forum let's fly carl to LA funddrive" to raise enough money to get him to you so you can drive him around various LA taco stands, sushi joints and assorted eateries, plus make him your famous quesadillas. it's a mission of mercy and a culinary necessity, no? i will be donating Canadian dollars, which are better than your anemic US dollars.

I enjoy eating raw fish, it feels right.
I like tuna sashimi and spicey salmon rolls with avacado.
Have you had beef carpachio?
Same as sushi.
Cut real thin so as to mirror the tounge.
I'm afraid though that sushi is losing it's touch here in America,I have it somedays for lunch in a cafeteria!
This now readily available delicacy from the sea is sitting alongside mashed potatoes and gravy.
Thats not a complaint by the way, just a distraction.

i wish i did. i don't know how to make sushi. a friend of a friend knows how.

i'm sure you could find some tempura recipes online though.. let me know how it turns out

I´ll try some recipes that i got and I´ll tell you,

Dan, I like a lot carpaccio, with olive oil and parmesan cheese.

On the other hand, have you tried ceviche? it´s a traditional dish from Chile and Peru, it´s raw fish with lemon juice, chopped onion, chili, salt and peppers, it´s excellent, for me a lot better than sashimis.

Christian I had the world's worst ceviche the other night in Montreal. My friend and I couldn't chew it, we had to spit it out, it was so horrible. Thanks for the reminder. But you're right, ceviche kicks sashimi ass. You should start a "ceviche vs. sashimi" thread.

I went into work yesterday and got handed a big bowl of home made ceviche with the crisp tortillas. It was delicious.

Too bad Kat, for a good ceviche the fish must be fresh and I keep rest the fish into lemon juice at least 45 min before eat.
