well Sunday Sunny Mill Valley Groove Day is the best (and most obvious) choice IMO.

As for sunny days, Clap Your Hands Say Yeah's eponymous album is very sunny weather music.

Yes, 'Sunday Sunny Mill Valley Groove Day' is great. As 'You and me song', easy lovely lyrics.
I can't decide what's my fave Cyndi Lauper song for a sunny day...

Out of all the bands mentioned back there, I'd rather listen to these than most of the others. Must be the nostalgia thing again.
