LBF inspired this thread and I hope he posts his best cornbread recipes here.
My two faves that I make often:
Honey buttermilk cornbread
• 3 T butter
• 1/4 c honey • 1 cup buttermilk • 1 egg
• 1 c cornmeal • 1 c white flour • 2 teaspoons baking powder • half teaspoon baking soda • half teaspoon salt
Melt butter Beat together egg, buttermilk and honey Mix dry ingredients
Mix everything, incl. butter.
Spread into buttered 8-inch square dish
Bake 20 minutes @ 425 degrees
Corn and cheese cornbread
1 c white flour 1 c cornmeal 1 egg 2 tablespoons honey 3 teaspoons baking powder half teaspoon salt 1 c milk 1/4 cup olive oil half cup minced onion 1 c fresh or frozen corn kernels half cup cheddar cheese
Heat olive oil in skillet. Saute onion until translucent. Set aside.
Beat egg, honey and milk.
Mix flour, cornmeal, baking powder and salt.
Combine milk with cornmeal mixtures.
Add corn kernels, onions and cheese.
Spread into buttered 8-inch square dish.
Bake 30 minutes @ 375 degrees.
I hear Dayanara does not like cornbread, which makes her a real weirdo.

Good topic. I actually like the cheap stuff, but I have one okay recipe I'll post later. Yours sound tasty. Can you mail cornbread?

my god...those recipes sound amazing. I love cornbread. My mom's from Kentucky and makes a pretty mean cornbread. With lots of butter spread on it...

jiffy conrbread is pretty good, my step-sister makes some with semi-creamed corn baked in the middle. they tell me it's good but i can't get past the chunky texture.
i am sitting here observing my emotional discomfort. |
