I am slowly evolving into a vegitarian and the logical extention of that would be vegan ism... it seems healthier. but I probably won't be the strictest vegan making exceptions for some cheese and butter and non caged chicken eggs.

Margarine is worse for you than butter. But of the soy spreads (like Earth Balance) are probably pretty good for you.

If I cut cheese out my diet, I would have nothing left but coffee.

Yeah, I've heard that about margarine. The nutritionists seem to keep changing their minds about stuff like that, though.

Depends on the margerine. If it's hydrogenated, it's bad news. Soon very few will be tho, since it's common knowledge that trans fatty acids are so bad.

Earth Balance (thanks Darwin) is fantastic. There are a few others, but EB is tops on the lists of vegans. =)

i will have to try the soy dogs...

honestly i prefer some of the soy stuff to the real... ie sausage.. hate the real... love the fake!! also love the boca burger better... not as greasy and I like it because you can see all the veggies in there! Also the soy lunch meat is better too.

I've never really cared for any of the meat-substitute foods I've tried, or for tofu, for that matter. Maybe I just haven't had the right ones, but the whole idea of vegetable matter made to LOOK like meat products kind of bugs me.

As far as butter goes, I used to be a butter lover but I really have no craving for it anymore. I've never tried Earth Balance but for my baking needs, when I need to replace butter or shortening I use "Spectrum Spread," which works perfectly for baking (I'll have to show you my peanut butter coopkie recipe!) and some of the non-vegans I know think it tastes just like butter. I, however, never eat it outside of baking because the smell revolts me (it smells just like butter and the smell of butter revolts me). Anyways, it's not hydrogenated but it's made from canola oil, which is one of the worst things you can put in your body (but when I get the craving for a wonderful carrot cake or peanut butter cookie I really don't give a fuck!).

No i am with you guys... I just think if given the choice of the taste/texture of meat vs fake meat... fake meat is better and has a better texture. Not as greasy either.

Set oven to 375 degrees F

ingredients:
-1 cup spectrum spread
-1 cup sucanat (or other unrefined sugar), ground in a food processor or electric nut and seed grinder to as fine a powder as possible
-3/4 cup maple syrup
-egg replacer for two eggs, follow directions on package
-3 cups w.w. pastry flour
-1 1/2 teaspoons baking soda
-1/4 teaspoon salt
-1 cup crunchy peanut butter (the kind that's made just with peanuts, not the Peter Pan bullshit!)

In a large bowl whisk together in this order: margarine, sucanat, maple syrup, egg replacer
In a medium bowl, combine flour, baking soda, and salt. Add this to the margarine mixture and whisk well to combine.
Stir in peanut butter.
Shape into one inch balls and place them on an ungreased cookie sheet three inches apart.
Bake at 375 degrees F for 10 to 12 minutes (not too long!)

And brownie points to you for a recipe that uses as a sweetner maple syrup. Pure Vermont maple syrup, of course.

Good point on the peanut butter, too. I grind my own organic peanuts, when I need some. It's nice and warm and fresh!

that's cool... i didn't know there were egg replacers... prob been under my nose all along and never noticed... thanks for the heads up.

I think for me the reason why i am waiting to try being vegan is that i don't cook for myself... i know that's stupid... but it's hard to find stuff that's vegan in the first place... and it's usually more pricy... so someday I will prob switch...

hehe - i've seen soy corn dogs before.. I've never had a corn dog tho, so i have no idea of what i'm missing..heh..

As for fake meats, i'm not trying to 'simulate' anything..i'm just open to different tastes and textures, as long as no-one gets hurt at least. =)

I kinda miss cheese, I must say. This low fat stuff is NOT cutting it.

I do love peanut butter though. President's Choice Blue Menu Peanut Butter. All natural, all delicious.

Go to your local groovy natural foods place. I bet they have a peanut grinder next to the bulk peanuts. Be a good environmentalist and take with you your own recycled plastic container. Grind the peanuts, go home, slap together a PB+J and taste the difference. It's the best pb, I swear.

Yeah, fresh PB is pretty nice, tho the 'natural' stuff in the store is pretty close.

Have you tried almond or cashew butter? Two more real treats..

I've also taken to sprinkling chocolate chips on toast w/nut butter, then popping it in the toaster oven for a few seconds, so they melt...oh my..

I can eat cashew butter by the pound. It goes down so smoothly. Not so almond butter. You gotta cut that stuff with a chaser of soy milk.
