Pork Loin slow cooked in a Crock Pot w/ mushrooms, onions and carrots in a dark BBQ flavored sauce

My folks made it, not sure what was in it. It was good though. I though you'd appreciate that Floop.

More Thai food later, I think. Chiliquiles are scrambled eggs with chilis, some corn tortilla strips, and maybe some cheese. Maybe some other stuff I can't think of, but all quite delicious.

And speaking of food, had delicious barbeque at my friend's party last night. Almost all hispanic people there except for me, my son, and 2 other people, and I ate the best barbequed chicken I have ever had. Hector who cooked it must have swathed it in his barbeque sauce so long that it had a dark brown coating that was amazing, and it was perfectly moist. The real standout was the skewers with marinated jalapenos and cherry tomatoes. They were delicious when eaten with the hot link sausage they had. With a cold beer.

I got all creative tonight.
I baked slices of a huge, garden-grown squash that was given to me (can't grow a cactus much less a vegetable)in a 375 oven for 40 mins, took it out, and layered it in parmesan to sit until a last-minute broil.
And...some sort of brown rice tomato mushroom onion mess.
And a split chicken breast for me and some trip-tip for my boyfriend (avoiding red meat when I can)
lots of food, all of it good.
was going to have a healthier version of a rootbeer float for desert tonight but I think I'm too full.

and EARLIER for lunch, I made a caesar salad and tuna sandwiches.
I love cooking and sundays are my day to do it.

it's this Mexican dish usually served for breakfast (with eggs inside) but also for other meals (then usually not eggs).. it's kind of like a "scramble".. it's got tortillas inside

I barbequed again last night (I was made for living in a warm climate) - pork sausages, haloumi cheese, butternut on the coals and lamb chops.

Tonight it's some artichoke pasta concoction, but I've been eating cherries all day and will probably pick out the artichokes and leave the rest.

I had chilli con carne, a pretty tame one but nice for a summer evening. I had the best jacket potato I've cooked for ages with it.

I have to say I make a mean BBQ. Make my own sauce, marinate for days, good times.
