Ok the gardening thread has got me in a domestic mood.

I know there are some really good cooks on this thread!!!

Wondering if you wanted to share your favorite quick and easy dinner recipies! Hopefully this will be something fun. They can be healthy, but don't have to be :) Personally, I don't eat pork or very much beef, but my husband does so I can always cook something with those ingredients for him.

Thanks in advance!

spread some hummus of your choice on a flatbread or tortilla
lay some sliced pepperoncinis on it
place some pastrami over them
put two leaves of romaine over it and roll it all up.

cornbread and chili

get two packages of the small 'jiffy' cornbread that's like 3 for a dollar and one package of plain yellow cake mix. nothing 'supermoist' or whatever, just cheap, plain mix.

put all ingredients for both mixes and mix together, then cook at 375 (you basically split the difference between the two temperatures) for about 35 mins. BEST cornbread ever.

meanwhile, brown a pound of turkey meat (or skip if vegan, really isn't necessary, IMO) with some onion and garlic. just use what looks right as far as quantity, it's all about how strong you like stuff.
if not using meat, saute onion/garlic wthout it.
mix with two cans of rinsed and drained kidney beans. never use that crap they preserve the beans with, it's crap for you.

dump one can of diced tomatoes into the pot with the onions and garlic and then dump the beans in and the meat if you used it and stir it all up. add salt, pepper, some chili powder, whatever you want in it. some cumin is good, too.
cook it all at just below simmering for at least 30 mins.
if it gets too dry or to revamp the next day, just dump another can of diced tomatoes in.

again you are a woman after my own heart, daisy :)

find a rice that tells you to put the water and the rice in at the same time. i like jasmine or medium-grain. orzo will also work.

one pound of asparagus, only the very bottoms cut off

using chicken (or veggie if it suits you) broth instead of the water the rice requires, put the rice, broth, and asparagus in together. sice the asparaugs so you have the tips and then circles for the rest of the stalk, even the parts that get to tough to eat if you steam it.

cook it according to rice package directions.
dump it into a bowl.

using the same pan so less dishes, slice one medium onion or shallot or whatever suits you. color of onion is your preference, mine's red.
slice a couple of cloves of garlic into the pan, splash some olive oil in there, and saute the onion and garlic together.
dump rice into the onion/garlic mixture, add some salty, pepper, maybe some basil

One pan, 40 mins and you're done and it's healthy and all the juices from the veggies (you can use asparagus or really anything that's got a firmness to it) goes into the dish, just yummy easy.

hey Daisy,

what kind of recipes are you lookin' for? I've, ahem, found lots of ebooks online of recipes and can put them up for download if you want...

unfortunately most of the dishes I cook are dash of this, try that and very unoften do I jot them down.

Kahlua + half and half + Stoli is tasty...and EASY too.

not to mention that you become easy after 3 or 5.

Darwin, honestily I have no clue. I really have never cooked much, ever, so I am thinking that the easier and more fool proof the better . Thanks!

KOK, you know what I have heard so much about this "toast" thing. I keep hoping that one day, I will be a good enough cook to master this special recipie. I have been experimenting with toasting frozen Texas toast... so far, it's going ok. Maybe one day I will work my way up to the real thing.

I make really good toast. I really do! Old family recipe I'm not willing to give away though.

Any particular types of food you want? Stir fries are fast, especially if you have someone to help with all of the chopping.
